What happens to a city's food when its people change?
In this conversation at Embassy Restaurant, we explore how the 1947 Partition transformed Delhi's culinary landscape. The arrival of refugees from Punjab and other parts of the subcontinent brought new tastes, cooking traditions, ingredients and entrepreneurial cultures that gradually became part of the city's everyday food identity.
We'll look at the restaurants, eateries, dhabas and food businesses that emerged or grew during this period, and uncover the stories behind some of Delhi's most enduring culinary traditions. From tandoori cooking and Punjabi influences to the evolution and popularisation of the rich, restaurant-style Mughlai food Delhi is known for today, we'll trace how food became a way to rebuild lives, create livelihoods, and reshape a city.
But this is not just a story about dishes. It is also a story of migration, memory, survival and reinvention.
We`ll also explore Embassy Restaurant`s history, its place in Delhi`s changing food culture, and how it became part of the city`s culinary history.
